Strawberry Lemonade Bars

Summer is finally here, and these bars are the perfect summer treat. They come together quickly in one bowl and can be easily doubled to feed a crowd. They are buttery, tart and sweet all in one.  I hope you enjoy them as much as we do!

The Crust 

¾ c. butter, melted

1 ½ c. flour

1/3 c. powdered sugar

 The filling

1 ¾ c. sugar

3 eggs

1/3 c. strawberry puree

5tbsp. fresh lemon juice

Zest of 1 lemon

1/3 c. flour

Instructions

Preheat oven to 350 degrees

  1. In a large glass bowl, melt butter. Add flour and powdered sugar. Scrape bowl clean and press into a 9x13 pan. Using a fork, poke holes all over into the crust.

  2. Place in the oven and bake for 15-17 min.

  3. In the bowl mix together sugar and lemon zest. Then add lemon juice, strawberry puree, eggs and flour. Mix until smooth. 

  4. Remove crust from oven. Pour filling mixture over parbaked crust. Bake for another 20-25 minutes.

  5. Let cool completely. Then cut into squares and sprinkle with powdered sugar. 

Notes

  1. I used about 4 large strawberries to get 1/3 c. of puree.

  2. In order to get a bright pink color for the bars I add a little bit of pink food coloring. It can be omitted. 

  3. For a fun twist you could substitute limes for lemons.
